A Veggie Venture's Favorite Summer Vegetables & Salads

Tomato & Zucchini Salad ... though really, any vegetables with crunch would do ... a staple this summer as well as last ... just veggies tossed with green onion, a bit of cheddar, fat-free Italian dressing and fresh basil






Chipotle Chickpea Salad ... this time with black beans (what grocery store only carries organic chickpeas at 3X the price? that would be St Louis' Schnucks ... ) and bulked up with corn and sweet peppers, a great summery salad, just a touch of heat from chipotles in adobo sauce

Rhubarb Country Cobbler ... made with Minnesota's gorgeous fresh rhubarb (frozen works too) ... a simple unadorned cobbler ... in fact, making it again for the first time in a long while, I wondered if it might need lemon zest or cinnamon ... but no, it's perfectly simply and perfectly delicious ... this received grins and groans, all around ...




Berry Baby Backs ... delicious baked (or grilled, of course) baby back ribs, brushed with a spicy-sweet berry sauce, no marinating required so quick-quick to the table ... and oh so good!







Ratatouille ... a low-cal and low-carb version of the French classic, filled with mid-summer through early-fall vegetables, eggplant, tomato, zucchini and peppers ... good served either hot or at room temperature as a side dish with grilled chicken or pork ... also a great vegetarian supper option ... easy to make ahead to serve later or tomorrow





Panzanella ... it's the first choice when the first perfect summer tomatoes appear, the Italian classic salad, a substantial side salad or an entire meal ... worth investing in the best tomatoes and the best bread




Fat Rascals ... a buttery cookie that's perfect for back-to-school and after-school snacks; one of my favorite essays, too









Chickpea & Chicken Salad ... stretches leftover or rotisserie chicken into an easy, weeknight supper; unusual spices for chicken salad






Nana's Cucumbers ... easy, tasty, perfect with summer cucumbers ... this is a real classic ... and not just because "Nana" was my grandmother!







Borscht Beets ... another vegetable with sour cream ... simple, a tad unusual, beets tossed in sour cream and balsamic vinegar ... tasty too!

Great to see all those ideas! I love the chipotle chickpea salad,with or without the chickpeas. The adobo sauce is such a great thing to have at the ready.
