Thanksgiving vegetable recipes!
Since 2006, it's tradition at A Veggie Venture to feature Thanksgiving vegetable recipes throughout November. This collection features recipes for your favorite Thanksgiving vegetables, the ones long-time readers and frequent visitors themselves voted for! The collection holds more than three dozen featured Thanksgiving recipes, all:
The collection's very first recipe, World's Best Green Bean Casserole remains the all-time favorite but in 2007, the low-carb Cauliflower Cream was the surprise favorite, followed in 2008 by Creamy Brussels Sprouts Gratin. In 2009, readers loved my Savory Bread Pudding with Butternut Squash, Chard & Cheddar and in 2010, the dramatic and vegetarian or vegan Fall Stew Baked in a Whole Pumpkin. Even though the sweet potato is our favorite vegetable at Thanksgiving, it took 2011's Slow Cooker Sweet Potatoes with Cranberry & Orange to really grab readers' attention. What will be the favorite in 2012? We'll see! Watch for new recipes throughout November! Enjoy!

I love this corn recipe for Thanksgiving. It comes from Carmen, who blogs at Mom to the Screaming Masses.
Corn Pudding
1 can drained corn
1 can cream style corn
1 cup sour cream (may be low fat)
1/2 c melted butter (1 stick)
1 box Jiffy corn muffin mix (8.5 oz. size)
Mix together well and pour into greased 9 x 13 pan.
Cook at 350 for one hour or until knife inserted in center comes out clean.

I personally add 1/4 t of smoked paprika to this, but the same amount of your preferred spice may also be added.
