I used extra brocolli and added some sliced carrot. It was kind of bland - not a lot of curry flavor. I'll add more next time. I added some salt and a few drops of toasted sesame oil, and it was pretty good. I love the smell of curry, but I really struggle to get good flavor. A teaspoon here or there, some coconut milk (also a pantry staple), and whatever odds and ends of veggies, meat or tofu you have on hand, and you can make a great quick curry.
