This presents a need to either start with a slightly higher temperature, or an increased cooking time, or both. Those who were cooking a big batch might consider to raise the temp by 25° for the first hour. If really striving for accuracy, get a temperature probe and read the temp on a normal batch at 2.5 hours and again at 3 hours. I will always give them a few pokes with a knife after that misfortune. You know...just to be safe. Lol. I also wrap my potatoes because I like the skins to be soft. I don't find them to be very good when they're crispy.
