Even better! Something roasted is almost entirely unlike the un-roasted version... <br />I have two problems with roasted veggies, however-- one, occasionally they are too oily for my annoyingly sensitive stomach, and two, roasting cannot be done with gas appliances, or directly over/under gas, as shown above-- because it tastes like the gas!<br />I have to be careful roasting peppers and the like, because sometimes they're very thick, so they don't cook through all the way for some reason.
