Learn to Love Beets

My own beet journey began with a late Sunday stop at a nearby farm stand. Twas a bonanza: four big bunches of beets, four bucks. Back in 2005, this was the sixth beet recipe I posted in 80 days: yes, I was already well on my way to being named "beet queen"!

All these years later, this easy beet salad remains one of the very favorites. It's soooo simple, just earthy beets and tangy feta, brightened with lemon juice. When I want to introduce people to beets? It's the first choice. So simple, so sumptuous, this.

One year, a local church asked me to develop an after-work cooking course for young singles, 6-8pm, a little cooking, a little eating, out the door. Such a challenge! When my "students" arrived that first night, they were h-u-n-g-r-y. But I was ready! I'd roasted beets and it took each one all of five minutes to peel and slice the beets,sprinkle with feta and drizzle with lemon. My Canadian grandmother insisted that "hunger is the best sauce" but to say that these young professionals — not one had ever tasted a beet before — left crazy for beets isn't bragging, it's beets!

How to Make Roasted Beets with Feta & Lemon

The detailed recipe is written in traditional recipe form below but here are the highlights in two easy steps. You can do this!

ROAST THE BEETS Do this ahead of time because roasting beets takes some oven time and the timing can really vary. I have two favorite ways to roast beets in the oven, see My Favorite Way to Roast Beets (more traditional, just heat and time) and My Favorite New Way to Roast Beets (with herbs and a little vinegar, the beets turn out very slightly pickle-y).

And while you're at it, I do recommend roasting extra beets! That's because straight from the oven, you'll want to try King Hill Farms Simple & Sublime Beets while the beets are still hot.

But roasted beets are great for meal prep, too. Check my collection of beet recipes for recipes marked with a little pot logo like this — — that call for beets that are already cooked. Most take only 5 or 10 minutes to put together!

Refrigerate the rest of the beets, whole, with the skins left on, and use them up with about five days.

MAKE IT! Peel the beets, just use your hands to slip the skins off. Be forewarned, your hands will stain a bit but it'll come out within a couple of hours. Slice or dice the cold beets, now that they're roasted, a knife will slip right through and the dense flesh will stay firm and pretty. Sprinkle a little feta over top, then squeeze a wedge of lemon over top too.

ROASTED BEETS with FETA & LEMON

Hands-on time: 5 minutes
Time to table: 5 minutes
Serves 4

2 large cooked beets, diced or sliced (see TIPS)
Feta cheese, crumbled
Lemon juice

Arrange diced or sliced beets on four small plates, top with feta. Sprinkle with fresh lemon juice. That's it! Now enjoy!

ALANNA's TIPS & KITCHEN NOTES
FETA If you've only tasted feta crumbles, now's the time to experiment with whole blocks of feta, usually sold in a brine. We buy a huge slab from Sam's Club but Trader Joe's sells a small container. Block feta is wetter, tangier, just more ... feta-er. So good!
