Beets are called, well, "beets" in North America but "beetroot" (in English only, obviously) in the rest of the world. We think of beets as a "root" vegetable because the edible portion grows below ground; in fact, botanically, beets are the lower stem of the beet plant. Tender leafy-green beet greens are also delicious; chefs are especially fond of tiny-tiny beet microgreens, so pretty on the plate. Mostly, we humans eat what we call "garden beets" or "table beets"; in contrast, "sugar beets" are grown to manufacture sugar. Don't be startled, it's natural for beets to turn urine a slight pink color. Beets are known for their glistening claret color but specialty beets come in lovely orange and gold colors, even white; they all taste the same and cost a lot more. Handling raw and especially cooked beets will stain your hands but the stain will wash off with a good scrub.
BEET CLEANING TIPS Even grocery-store beets can be covered with a light layer of dirt; beets from the farmers market can be downright muddy. Wash the beets under running water; soak extra-dirty beets in warm water. Avoid scrubbing the skin too hard, it seals in the beet juices.
HOW to TRIM BEETS To trim the beets, slice off the greens but leave an inch of stem, also leave the tail (the taproot) intact. Why? Cutting into the root before cooking will cause the juices to drain out during cooking.

I don't like cooked beets like we ate out of the can years ago. But raw beets!! Oh my. I just peel them, or it, cut off top and bottom and sneak a slice with salt before anything else. Then I add it to tossed salad - chopped up like your do a carrot . Everyone is surprised!
