BROILED TOMATOES with OREGANO
Time to table: 10 minutesServes 4
2 large tomatoes
2 - 3 cloves garlic
4 teaspoons fresh oregano, chopped
Olive oil (tonight, from a mister)
Salt & pepper
Preheat the broiler. Wash and halve the tomatoes crosswise and place on a rimmed baking sheet (a 9 inch cake pan worked great tonight). Cut the garlic into slivers and insert into the meat of the tomatoes. Sprinkle with oregano. Spray a light mist of olive oil on the tomatoes. Broil for 3 - 5 minutes until the garlic begins to brown and the tomatoes are warmed through but still firm. Serve immediately.
