THE BASICS
[FEHN-uhl] There are two kinds of culinary fennel. Both are aromatic and both have pale green, celerylike stems and bright green, feathery foliage. Florence fennel, also called finocchio, is cultivated throughout the Mediterranean and in the U.S. It has a broad, bulbous base and is treated like a vegetable. This is the fennel we find in grocery stores, the one that some people has a touch of "licorice" scent and flavor. Common fennel is the source of oval, greenish-brown fennel seeds.
