Day 141: Golden Carrots

Five minutes flat. Ingredients easily kept on hand. Kid friendly.

Can't beat that combination!

While tonight there was no forgoing the convenience of pre-grated carrots, to my taste they were too thick, closer to a julienne cut, and dry. Another time, I'd pull out the food processor for grating whole carrots, especially because I suspect fresh-cut surfaces would also better absorb the fruit juices.
