CORN: THE BASICS
Also called Sweet Corn, Sweetcorn, Sugar Corn, Maize [maze], Miellie [mee-lee] and Maellie.

SEASON The corn season is "summer". Sweet corn becomes less sweet about three days after picking, so the fresher the better. In the grocery store, watch for ears still in their husks with glossy, not dry silk. But for freshness, a farmers market or vegetable stand with locally grown, just-picked corn is a better bet for really good corn. Farmers call the first most-tender ears of corn "green corn". HISTORY Along with tomatoes, chiles and potatoes, corn originated in the Americas. The word maize means "our life" and the Pueblo people honored corn as the fifth element: earth and air, fire and water, and corn! Modern sweet corn was developed at the turn of the 19th century but only became available to home gardeners in the 1920s. CORN ANATOMY Technically, the corn plant is a grain, not a vegetable, but we treat its "ears of corn" (also called corn cobs and technically the plant's fruit) and "corn kernels" (technically, the fruit's seeds) as vegetables. "Corn husks" wrap the kernels in a natural protective covering; "corn silk" extends out the tip of the husk, one thread per kernel!; the liquid expressed from the kernels is called "corn milk". Once dried and treated, the husks are used to wrap tamales but otherwise the husks and corns are inedible. But don't throw away the cobs, throw them into the pot to add sweetness to vegetable stock! Corn is unable to grow in the wild, it requires man's intervention to propogate! VARIETIES Sugar-rich varieties of corn are called "sweet corn" and raised for human consumption. English-speakers outside North America call sweet corn "maize". Field corn (also called "dent corn" for the dent in the top of each kernel) is raised for animal consumption. "Indian corn" has multi-colored kernels and is beautiful in fall floral displays. Popcorn is a special variety of corn that will not only "pop" under heat but turn itself inside out! MONO CROPS & CORN POLITICS In The Omnivore's Dilemma, food activist Michael Pollan decries the prevalence of corn in commercial foods, where you'd never expect it like industrial beef, chicken and other meat; salad dressing; soda pop. That said, frozen corn and canned corn are acceptable out-of-season for dishes where corn is just one of many ingredients. CORN NUTRITION INFORMATION

NEVER LIKED Corn? TRY FRESH CORN
Who, really, is new to corn? It's everywhere. But here's the thing. Frozen corn and canned are fine for winter but the best corn is fresh off the cob, as fresh from the garden as possible – unfortunately for convenience, this means "no supermarket corn". Head to the farmers market during the growing season, in the South, that means beginning in May, in the Midwest, that means July, in the North, well, think late July or early August.
